This revised recipe has been long overdue, and to be honest it’s been sitting on my desk ready to post for a few weeks now. Instead of three logs, you get four here, but the basic method is still the same. I’m sure many of you have already made them, as have I but some readers are still asking me for it and although I do have a recipe posted a few years ago, I think this updated one is slightly better.

Book Review: The Lambshank Redemption Cookbook

Yes, you’re not seeing double. There’s no spelling mistakes here; the title of this book is what it is. Don’t let the funny book title and the hilarious recipe titles fool you (excuse the pun). The recipes are no joke – it’s serious stuff, serious ingredients, serious cooking, made simple for everyone to try. I’ll be trying a couple of them myself this week. They sound good and Stephen Conroy’s photos makes them all look good. What I can say is that this cookbook lifted my morale today after a tough couple of days!

Gingernut and Mascarpone Mini Cheesecakes, and a few thoughts

gingernut-and-mascarpone-cheesecake-0748Seven days until Christmas. Now that’s 2016 almost over. I just can’t believe it. Can you?! We have been having quite a rainy week and for the very first time yesterday I felt the cold and the humidity. Is it really time to wear our coats? Could be, but it should get a little warmer over the next few days so we’ll just have to see about that. My friends in MI have been some wicked snowstorms. I’ve been asking for some but none of them obliged yet! Oh well.

Courgette Fritters

courgette-fritters-0720I think it’s time for a little recipe here on C&T. What a couple of days these have been, eh? I’m not going to get into all the madness that was and is the US election. Loads is being said, and my contribution is there for all to see on my personal FB page. I won’t get into it here because this is not a political blog, nor I wish to see it turn into one from today.

To be honest, since it’s getting a tiny little tad too much (you get my gist) I decided to immerse myself in my books today, with one of the reasons being I am feeling under the weather, and I hope to make the beginnings of a cold go away. Also, these past few weeks have been full of reviews and I feel it’s time for a break. So onto the recipe.
