courgette-fritters-0720I think it’s time for a little recipe here on C&T. What a couple of days these have been, eh? I’m not going to get into all the madness that was and is the US election. Loads is being said, and my contribution is there for all to see on my personal FB page. I won’t get into it here because this is not a political blog, nor I wish to see it turn into one from today.

To be honest, since it’s getting a tiny little tad too much (you get my gist) I decided to immerse myself in my books today, with one of the reasons being I am feeling under the weather, and I hope to make the beginnings of a cold go away. Also, these past few weeks have been full of reviews and I feel it’s time for a break. So onto the recipe.

Mum’s Open Ricotta Pie

My Mum's Ricotta Tart (0660)Hey everyone, hope you’re all doing great. I feel rested after a week-long break up in the Lake District. We’ve been there before but this last trip has been the most enjoyable. I read two books (even though I packed five of them in my backpack – and I’m continuously wondering why my back problems have gotten worse during the past few months), explored Derwent Water and its surroundings, cried like a baby with joy when I saw all those adorable little lambs, soaked up the Sun (it was warmer than Malta for a few days), had coffee and afternoon tea and indulged in good pub lunches and ice cream. It was one of the most peaceful weeks in my life. I kept technology usage to a minimum; most of the time we didn’t have any mobile or Wi-Fi signal anyway, and frankly I wouldn’t have had it any other way. I did the basic stuff in the evenings at the cottage where we stayed in and that’s it. Bliss.

Lentil and Chestnut Soup, life updates and some thoughts on ‘Simply Nigella’

These past couple of weeks are turning out to be so weird. What a way to start today’s post, eh? In the spirit of Halloween I am still feeling like a zombie. Sleepy (strong anti-ear infection medication does that to you, trust me) and generally very light-headed. I meant to post a recipe yesterday, but my to-do list went out the window in the afternoon since I didn’t feel well at all. The situation hasn’t improved much. My ear still feels like someone’s lighting a lighter in it and to top it all off I get stabbing pains at intervals, as if someone is literally poking a needle into my eardrum. Not fun. Babies are prone to getting ear infections, I am constantly hearing right now. True. I’m not a baby but I still feel miserable. Poor things (little ones not me), no wonder they constantly cry in pain.

Let’s move on to the more cheerful things, shall we? I have two pieces of good news. I have my new desk! I am so pleased with it. I almost couldn’t believe it was here while watching J and his dad assembling it in the study. I am really enjoying working in this room even more. It’s my haven. Nearer completion we plan to purchase a comfortable reading chair to place next to the window. Can’t wait. The second piece of news is that I am waiting for a number of cookbooks to arrive, all of which are for review. I’ll be happy if they all make the cut, so we’ll see.

The weeks are really going by so fast. I can’t quite get my head round it. However summer doesn’t seem to want to come to an end here in Malta. The weather is glorious, a little too hot for my liking, but it comes with one perk. If you’re into eating with family and friends on a breezy rooftop, or if you’re lucky enough to own a luscious green garden, this is definitely the perfect weather for you. There is nothing like fresh food and great company, with perhaps a nice bottle of chilled white to share. This simple pasta dish reminds me of all that. I am looking forward to winter cooking, but in the meantime I don’t mind eating this now.

Peas with Fresh Garlic and Parsley (0132)

It seems as though the Sun left us for a while this morning, and it could not come back out from the gloomy clouds for the rest of the day. Rain is also on the menu, but I am not minding it one bit. Last week was hectic but absolutely lovely. My friend’s visit was a success. We went to loads of places around Malta and she seems to have enjoyed her holiday here. Now I’m taking a little time to adjust to my routine again, but I’m happy and I have a rest-day planned. I will be cooking though and I can tell it will be good as the temperature also gave me a rest and I will be savouring every second.

For today’s lunch I will make an Indian-inspired recipe for buttered chicken and will work on that as soon as I publish this post, and plan to make this as a side. I think it will pair up well with the chicken and frankly I think it will make a delicious side to any other dish.
