Hello everybody. Hope you’re all doing well. I’ve been meaning to write another one of these for so long but life has completely taken over. As it always seems to do. One thing has remained quite constant though: readers of this blog just reminded me that the time for another coffee chat has lapsed and it was high time for an update.
Without taking away anything from these lovely people, I’m always taken by surprise when I get asked for updates. I’m glad many of you find these useful, and if not that, sufficiently entertaining. As I have said before, as much as I love reading about people’s life and adventures, I lead a small life and I’m constantly wondering why my readers keep coming back here. I’m so glad they do.

I can’t believe that it’s September already, and I’ve not written anything on C&T since the start of August. There were quite a number of reasons for this – one of which is that frankly I haven’t been trying new recipes or doing any baking. (I feel an updated Coffee Date post is on the horizon…)
Although this blog is practically here to profess my love for the kitchen, our summer months here in the Med are too much, as in there’s way too much heat and humidity in the air already. My adding to it in the house is no help at all. So I’m taking a break.
However this won’t last long now – I know I have to get back into the swing of things very soon, so this simple salad is a good way to start.

C&T has by now become quite the fixture in my life. I find myself thinking about new recipes and reviews continuously, especially when I’m doing the usual mundane things, which most of the time are house chores. Stirring a soup in the kitchen is also included in this list, although funnily enough it’s not as boring as it seems for me. Anyways, all this is to tell you that I feel I haven’t had a proper catch up with you in ages.
A few months ago, I registered for a couple of online short courses with WordPress. One of the writing tasks was exactly like this – a kind of coffee chat/date, and I’m thinking about making it a series on this blog. I’ll try to post them regularly, although not that often as to become mind-numbingly tedious! That’s not my plan at all. I don’t keep a journal for various reasons, however this format of blog writing could serve me well.

When I woke up this morning I kept reminding myself that it’s Thursday (not Sunday) and a public holiday on the rock. It’s not as quiet as one might hope, and to type this I had to close the window in my study. It’s easy to focus now and I *am* calm. Which brings me to a recipe made best when you have a good thirty minutes of peace. So tell your partner in life to babysit the kids and the pets for a little while and spend some time in the kitchen with me.
One of the things I love about Malta is the fruit and veggie trucks you see dotted around the many towns and villages on the island. I love going to the one near to where I grew up in Birkirkara. I love visiting my mum too
which goes without saying and of course, going there brings back good memories. I have been meaning to post the following recipe and the above photo for ages so here it is. It’s starting to get warmer here now and we’re already finding plenty of spring and summer produce. I’m finding good quality strawberries too which I macerate in lemon juice, some sugar and pepper too. Delicious.

So I have some time to myself on this lovely Sunday morning and thought I would drop a few lines. This week has been quite a hectic one. What made it worse was another little round of the flu. It’s easing a bit now all due to some rest I had yesterday. J wasn’t feeling too good either and after a bowl of minestra (the Maltese version of minestrone) we had a delightful movie afternoon. My feather blanket and hot water bottle became my best friends. I still managed to bake chocolate cookies *just got up and having one right now*. The Sun’s out today and that makes me happy. (Is Spring around the corner?)

One of the things both J and I wouldn’t live without is coffee. We’re not the typical coffee-obsessed persons – we have an Americano and a cappuccino in the morning with our breakfast, and an espresso after lunch. On rare occasions we have another espresso round about four, but that’s that.

You might call me obsessed, and you would be right. I mean, I don’t even know how many lemon cakes you can find in this blog. Lemons are and will always remain one of my favourite ingredients. I never tire of their taste and smell. If I were to close my eyes while plunging my face in a bag of those lovely yellow fruit, I would immediately be transported to somewhere in the Mediterranean.
