After much deliberation I’ve decided that the last recipe for 2014 will be one of the best I’ve tried this year. When I say the best I mean it in every sense of the word, including the easiest. I make this recipe again and again and it turns out good every time without fail. I also like to make it when I’m in a rush, or before I head off to someone’s house for lunch or dinner. Or when celebrating 4 years of C&T! Time flies, but I’m stating the obvious there.

A Christmas Gift: Shortbread

Since the countdown to Christmas is now in full swing, I thought that a recipe for shortbread is now in order. This is one of my go-to things to bake when I am invited at someone’s home. Reasons being: I definitely don’t need to spend a fortune for gifts, I can make it easily up to two days before the event (it will keep wonderfully well if stored properly), it can be easily transported anywhere without becoming a mess when travelling, and the recipe can be varied according to any flavour you want. I have once tried it with lavender and lemon zest. It was the nicest thing I have ever had. It’s a win-win situation all round.

I can still remember writing last year’s pancake recipe. Seems like yesterday. Making pancakes is one of my weekend highlights; in my books it’s not right to leave them until Shrove Tuesday. And what a beautiful thing it is when I find time to make them during the week. A rare occurrence I admit, but it happens.

My search in this blog has failed to give me any useful results, but I will remedy this right now. I can’t believe there is nothing here about it. Luckily I also have some good photos to show you. The Maltese are nuts about the stuff, and so am I!

Q: What to do with left-over Shortcrust?

I get asked this question quite a lot, especially after posting the recipe for shortcrust pastry. I have one quick solution for you. Roll out the remaining pastry into a sheet and cut it into thick strips. Shallow-fry them in a little bit of vegetable oil and when they puff up and turn golden brown remove them from the pan. (Don’t be absent-minded here as they will burn easily. Happened to me countless times!) Place on some kitchen paper, sprinkle them with a bit of sugar (white or brown or whatever you choose) and a splodge of honey or golden syrup. They are yummy. Great for a pick-me-up or whenever you need some cheering up! Short but sweet.
