Easy Shakshuka

easy-shakshuka-0631I’m never in the mood for complicated dishes. More so right now. I was out all morning/early afternoon running errands. Carrying all the grocery shopping up the stairs isn’t how I would like to spend the first part of this Valentine’s Day but there you go. I don’t expect anything else mind you, I like when my days are full with things to do, although I must say today I feel somewhat under the weather, after a few sleepless nights. I’ve tried everything, from a calming brew of herbal tea to lavender essential oil, but nothing seems to work. Part of it is that my mind just doesn’t stop and I’m finding it so hard to wind down at the end of the day. Some of this comes with keeping on with my reading, writing, thinking and jotting down mental notes throughout the day, especially late into the evening. I know some of my readers and blogger friends are nodding in firm agreement. I can almost hear and see you my friends. I find a kind of gentle reassurance in that, although I do wish everyone plenty of peace and rest. Always.

Chocolate and Avocado Muffins

chocolate-and-avocado-muffins-0740Last week went past so fast that I have realised only today that I was due to write a couple of posts on this blog. I have quite a few recipes to choose from, and I was about to start a new one. However during my visit to the veggie store this morning, my trusty greengrocer commented on the new cover photo on my Facebook page. It also follows nicely from the savoury ones I posted before this one. (Just for my lovely readers to know, you can now also find me on Instagram, where I also happened to post a similar snap almost four months ago to this date.)

They say that practice makes perfect, and I need a lot of practice when it comes to muffins. I cannot complain about the recipes I try, because I know they’re good and so easy to whip up. They are also life-savers when unexpected guests show up for a spot of tea and cake.

Rosemary and Olive Oil Cake (0632)One of my favourite food bloggers and creative people around is Heidi Swanson, the brains behind 101 Cookbooks and founder of Quitokeeto. I have been following Heidi for a long time and I just love the minimalist look of both the blog and her photos. They are both examples of the saying that simple is best, which I totally am a fan of. As it happens, she together with a handful of other excellent bloggers, gave me that much needed nudge to start my own blog. I don’t know them but I still consider them to be my mentors. They truly show us how it’s done.

Blueberry Pancakes

Blueberry Pancakes (0403)I cannot believe we’re already in the second week of February. Where time is going I really don’t know. It must be a good thing though – it must mean I have plenty of things to do. This month started with a birthday get-together for one of my dearest friends, and I know that more good things will follow. There’s nothing better than to feel positive. It’s hard sometimes because life is not only about smelling the roses but it’s the little things that make a difference. Like pancakes, just to mention one example!
