Minty Chicken

Minty Lime Chicken (9915)This is definitely a Throwback Thursday recipe. I promise I didn’t plan it on purpose. What’s true is that I’ve been thinking about writing about it for ages. I never did until now because the photo isn’t good at all. It almost went in my not-to-publish file, but I’ve changed my mind. This recipe turned out well so why not?

It goes back to the first month or so in my kitchen here in Malta, when I was barely doing any serious cooking. We moved back in the middle of the summer months, when being in the kitchen, I think, is totally unbearable. The heat is just too much for me, so I either cook late in the evening or very early in the morning, although those two options don’t always work for me either. We end up eating loads of salads and the likes instead, and there’s no need to say that baking stops almost to a complete halt.

Quick Chocolate Bundt Cake

Chocolate Bundt Cake (0412)Before I move on to another recipe, I would like to thank everyone who sent me messages after the post about Androuet and their beautiful book. I couldn’t have written that without the never-ending support of my lovely readers and friends so I want you to know how much I appreciate that. Thank you!

And now let’s move on to some food – it’s a cake, and it’s chocolate. I have noticed that for the past couple of years I consistently post a chocolate recipe. Not only am I constantly searching for that perfect chocolate cake, but also I know that the simpler and quicker that recipe is, the more inclined I am to making it. Plus at this time of year there’s enough running around and trying to catch up with preparations for Christmas lunch and/or dinner, which ever one is traditional for you.

White Chocolate and Strawberry Muffins

White Chocolate and Strawberry Muffins (0218)

I cannot really remember the day I baked these lovely goodies. Most probably it was sometime around mid-June, but somehow I never managed to write about them until now. Things recently have been busy and complicated, and now I’m dealing with grief. I wish the temperatures were still in the decent 20s. Celcius that is. It would have been easier to bake because I know that being in the kitchen often is good for me. If you set aside the eating part, which is something I love most obviously, the act of measuring out the ingredients, putting them all together and waiting patiently for the result takes away a big load of stress and anxiety which unfortunately has lately become part of my life. I am still cooking, well, somewhat; I don’t really know if making myself a green salad is actually cooking but baking is another matter and it’s what I like to do best.
