Listen, it’s getting warmer now and I feel my baking days for this Spring/Summer are on their last leg. I’m not really looking forward to that, but one of the joys of this blog is for me to have a record of what I made throughout these past 6 years. Woah…6 years? Yes, and a few months. I love them for various reasons, mostly because when I’m feeling lazy there’s nothing to cut: I just take one and stuff my face with it basically. Then a second one beckons. Usually. So the only thing that annoys me here is that they disappear very quickly. Somehow a cake lasts for a good couple of days. Oh well…

Mum’s Open Ricotta Pie

My Mum's Ricotta Tart (0660)Hey everyone, hope you’re all doing great. I feel rested after a week-long break up in the Lake District. We’ve been there before but this last trip has been the most enjoyable. I read two books (even though I packed five of them in my backpack – and I’m continuously wondering why my back problems have gotten worse during the past few months), explored Derwent Water and its surroundings, cried like a baby with joy when I saw all those adorable little lambs, soaked up the Sun (it was warmer than Malta for a few days), had coffee and afternoon tea and indulged in good pub lunches and ice cream. It was one of the most peaceful weeks in my life. I kept technology usage to a minimum; most of the time we didn’t have any mobile or Wi-Fi signal anyway, and frankly I wouldn’t have had it any other way. I did the basic stuff in the evenings at the cottage where we stayed in and that’s it. Bliss.

Rosemary and Olive Oil Cake (0632)One of my favourite food bloggers and creative people around is Heidi Swanson, the brains behind 101 Cookbooks and founder of Quitokeeto. I have been following Heidi for a long time and I just love the minimalist look of both the blog and her photos. They are both examples of the saying that simple is best, which I totally am a fan of. As it happens, she together with a handful of other excellent bloggers, gave me that much needed nudge to start my own blog. I don’t know them but I still consider them to be my mentors. They truly show us how it’s done.

Pudina (a.k.a. Il-pudina ta’ Mari)

Maltese Pudina (0635)Having just returned home from a routine dentist appointment, I thought there was no better time to complete today’s post! This has been sitting around here since last Friday but I couldn’t complete it in time. Today, after having recuperated some much-needed sleep throughout the night, I can say that it’s the first time in a month I feel rested. The sciatica pain is slowly dying down and telling you that I am relieved is definitely an understatement. Cheers to that.
