Happy New Year everyone! I hope you had a good break over the past few weeks, and that you enjoyed the holidays. It was a very busy time here of course, and my kitchen worked overtime this year. I’m so happy that it did though. I also had the time for some baking for family and friends. There was no better time for switching on the oven and turning on the heat. It wasn’t that cold in December, but let me assure you that January has started off with a kick. We’re feeling it here in Malta this week. It’s going to be a cold weekend. Some are loving it, relishing it even, others are fuming

Having just returned home from a routine dentist appointment, I thought there was no better time to complete today’s post! This has been sitting around here since last Friday but I couldn’t complete it in time. Today, after having recuperated some much-needed sleep throughout the night, I can say that it’s the first time in a month I feel rested. The sciatica pain is slowly dying down and telling you that I am relieved is definitely an understatement. Cheers to that.

Earlier this week, on one of my regular visits to the greengrocer, I spotted a small amount of artichokes in one of the crates. I remained calm on the outside, but inside I was dancing my happy dance! And they looked too lovely not to buy. Some ladies in the shop gave me so many strange looks, as in are-you-mad-they-are-still-so-expensive kind of looks. What they don’t know is that I missed them so much when we were still living in the UK, where they cost double the price and most certainly they didn’t look as beautiful as the ones we get in Malta. Anyway I certainly don’t regret having them for dinner later that day! I mean, would you?

This week will be a stay-in week. Lucky you, I hear you say. Honestly, I would love to be out and about though, instead of being stuck with a very painful ear and throat infection that’s really making me lose both my patience and hours of precious sleep. I wasn’t even going to post anything for the next few days, but C&T really needs some love, care and attention right now, so here I am. I love being here, sharing recipes and cooking tips, and writing. Also I learn so much by reading comments and blogs by my favourite people. It’s totally worth being here. Even if half of my face is a mess and telling me to rest. Now.
However it’s going to be a rainy week they say, and what better excuse than to spend some time in the kitchen and bake. A very good friend of mine and her daughter gave me a couple of cake recipes which are the bomb. They are so good that I plan to share very soon. I just love it when people share their favourite recipes with me and in turn allow me to share them with you. I will give them a mention of course when I do just that, because that’s my style and I like to keep it that way. Come back for more later, but in the meantime onto today’s dish.

These past few weeks have flown by like nothing, and I barely stopped for a break. It has been go go go from the get-go from the week before Easter until now – more like until I don’t-know-when-it-will-stop day. I’ll inform you if it happens. Besides that I can say that it’s all been good. The weather’s now getting better too. Hurrah for that! I’m also having a bit of a clear-out for this month. A good friend of mine is visiting us in 30 days
she says: she’s counting down and I must clear the guest bedroom for her. That, my friends will resemble something out of the Exodus. I don’t dare think about it, as that room *is* the jungle. My mum suggested taking before and after photos. I, on the other hand, will stay away from that space as much as humanly possible.

Last year I was lucky enough to join J on a very short trip to Ghent, Brussels. It was cold. I felt it in my bones, more so after still wearing my t-shirts back home. It was the first time I wore my winter clothes after a sweltering summer in Malta. On our first day in Brussels I underestimated how cold I would feel, and I didn’t wrap up properly. I learnt my lesson that evening though and geared up the next morning. I spent the day exploring the town on my own while J was away giving his lecture. It was rainy and gloomy but I still enjoyed it immensely. I love spending time alone. I walked and walked and walked, city map glued to my gloves in case I got lost – one of my all-time fears. I always manage to find my way back though. Score.
