Picnic Pasta Salad and a Special #PastaFriday Event

Picnic Pasta (8117)So last Friday I announced that I’ll be posting a pasta recipe every week. Today I’ve decided to make it an event. Why not?! So if you are a food blogger and you love pasta, this can be the space for you. To participate in this weekly event, on a Friday or during the weekend, I invite you to write a post on your blog accompanied of course by a pasta recipe. What you need to do next is very simple:

  1. Include a link to your post in a comment on my post for that week.
  2. Include a link to my post in your own blog post. Don’t reblog the post. A simple link will do.
  3. If you use Twitter promote your post with #PastaFriday so everyone will be able to see it.

Easy. This event will run up to October 2nd, at least for the time being.

Now onto this recipe which I have promised you ages ago but never got round to it. It’s an off-the-cuff one simply because everyone does pasta salad differently. Everyone comes up with many variants most of the time. I have to be honest here: there has been a time (I suspect that it’s not over) that this became one of my regular go-to suppers as it’s easy to prepare and good for transport. Also it’s a good one for making use of things I just want to use up. I open the fridge and voila you have a meal. I have made it during these hot months for friends coming at the house at the last minute, especially during those intermittent weeks where I skipped my otherwise regular grocery shop.

Some people ask me what are my go-to things I make when I’m hangry. This is not a typo, it’s a word apparently, though my search for it in the dictionary was unsuccessful. It’s a mesh of two words: hungry and angry. It wasn’t on Merriam-Webster, but boy have I experienced this before. And I’m guessing that you have too. It happens when I want to eat but I’m pressed for time or when I really want to munch on something but I just don’t want to be bothered.

The following recipe is what I go for when I want the kind of lunch that doesn’t necessarily make me crave anything else as a snack. I do make this very often, that is, whenever I have an avocado or two in the house. I seem to buy my local greengrocer’s weekly summer haul of avocados. I must ask for a discount next week. I also need to remember to make a bowl of guacamole. Tomatoes and chili peppers are now at the top of my shopping list.

Fried Courgette recipe and a Life Update

Not writing anything on C&T for these past two weeks has been a strange experience. Last year I took a month-long break during all of August to focus on moving and trying to settle back in after the UK. This time things are very different and difficult. To say that these past few days have been tough doesn’t even begin to describe it. My maternal grandmother passed away early Sunday morning. Her funeral was held last Monday, giving us almost no time to process this loss. My grandma had been sick for 13 years – in fact, the last time I remember her being ok was at my wedding. I remember my mum asking me to go hug her before my going away. For some reason that comes to mind every time I think of her. Somehow I managed a reading during the funeral service and kept calm, but I couldn’t help feeling upset by the end of it. What I can say for sure is that I feel deeply thankful for being able to be there during her last days with us. She is now at peace.

Writing about some of my favourite cake recipes at the end of every April has become a sort of tradition here on C&T. It’s my birthday later on in the week so it’s kind of themed, at least for me! It started a few month after the birth of this blog, when people started asking me about the cake or cakes (because yes, there were times when I made more than one) I usually make for the day. I try to vary as much as possible, but I can happily say that more often than not there’s always a copious amount of chocolate involved.

Broad Bean Risotto

When I woke up this morning I kept reminding myself that it’s Thursday (not Sunday) and a public holiday on the rock. It’s not as quiet as one might hope, and to type this I had to close the window in my study. It’s easy to focus now and I *am* calm. Which brings me to a recipe made best when you have a good thirty minutes of peace. So tell your partner in life to babysit the kids and the pets for a little while and spend some time in the kitchen with me.

One of the things I love about Malta is the fruit and veggie trucks you see dotted around the many towns and villages on the island. I love going to the one near to where I grew up in Birkirkara. I love visiting my mum too which goes without saying and of course, going there brings back good memories. I have been meaning to post the following recipe and the above photo for ages so here it is. It’s starting to get warmer here now and we’re already finding plenty of spring and summer produce. I’m finding good quality strawberries too which I macerate in lemon juice, some sugar and pepper too. Delicious.
