While apologising profusely for not posting a recipe, or anything else really during the past few days, I can say that the busiest time of the year for me has officially started. It began a few weeks ago to be honest, but only now I am feeling it. It – as in what-the-heck-I-don’t-know-what-I’m-doing type of thing. What’s worse is that Christmas food is at the bottom of my list, and that almost never happens. I have, with the help of my lovely mum, put up some decorations, tree and all, but as much as I have decided not to stress about the trivial things, I’m stressing more as a result. Does that happen to you too? Mind you I cannot complain too much you know – I am prepping for a simple meal and I just have to see that I have all the ingredients I need. That’s all. However as much as I’m trying to put on my Nigella anxiety-lessening supercape, I’m failing miserably. But things can only get better. (No, I’m not quoting D:Ream.)
I can’t believe that it’s September already, and I’ve not written anything on C&T since the start of August. There were quite a number of reasons for this – one of which is that frankly I haven’t been trying new recipes or doing any baking. (I feel an updated Coffee Date post is on the horizon…)
Although this blog is practically here to profess my love for the kitchen, our summer months here in the Med are too much, as in there’s way too much heat and humidity in the air already. My adding to it in the house is no help at all. So I’m taking a break.
However this won’t last long now – I know I have to get back into the swing of things very soon, so this simple salad is a good way to start.
I cannot believe we’re already in the second week of February. Where time is going I really don’t know. It must be a good thing though – it must mean I have plenty of things to do. This month started with a birthday get-together for one of my dearest friends, and I know that more good things will follow. There’s nothing better than to feel positive. It’s hard sometimes because life is not only about smelling the roses but it’s the little things that make a difference. Like pancakes, just to mention one example!
I think I mentioned this before: apples are not necessarily my favourite fruit. Then, you say, you were living in the wrong places. And you might be right on that one! Michigan is practically apple-mad and so is the UK. For me, apples are meant to be eaten as they are, raw with the skin on if possible. I don’t like cider either, but a trip to the cider mill is always fun.
I am partial though to the apple and pastry combo. I generally don’t believe in rules when it comes to food, but I am particular about this. Apple pie is to be eaten hot with vanilla ice-cream. No custard malarkey business and for goodness sake, no cold pies please!
One of the easiest things for me to cook when I feel as if I’m racing against time is chicken. I know I’m not alone on this; when people ask me for recipes, 99 percent of the time it’s all about cakes or chicken. My favourite chocolate cake recipe? Done. An easy chicken recipe? You’re sorted. And here’s another one.
I don’t normally go for chicken breasts, because I feel edgy cooking them. I prefer something on the bone, like chicken legs. The meat nearest the bones is always more tender and juicier, and almost never goes dry, no matter how long you cook it for. It also reminds me of my mum’s Sunday lunches, and my obsession with drumsticks. They would fall off the bone, and at the end of the meal I would declare that they were the best thing I’ve ever had. (Excluding chocolate and marshmallows, of course.)
So last Friday I announced that I’ll be posting a pasta recipe every week. Today I’ve decided to make it an event. Why not?! Now onto this recipe which I have promised you ages ago but never got round to it. It’s an off-the-cuff one simply because everyone does pasta salad differently. Everyone comes up with many variants most of the time. I have to be honest here: there has been a time (I suspect that it’s not over) that this became one of my regular go-to suppers as it’s easy to prepare and good for transport. Also it’s a good one for making use of things I just want to use up. I open the fridge and voila you have a meal. I have made it during these hot months for friends coming at the house at the last minute, especially during those intermittent weeks where I skipped my otherwise regular grocery shop.
Some people ask me what are my go-to things I make when I’m hangry. This is not a typo, it’s a word apparently, though my search for it in the dictionary was unsuccessful. It’s a mesh of two words: hungry and angry. It wasn’t on Merriam-Webster, but boy have I experienced this before. And I’m guessing that you have too. It happens when I want to eat but I’m pressed for time or when I really want to munch on something but I just don’t want to be bothered.
The following recipe is what I go for when I want the kind of lunch that doesn’t necessarily make me crave anything else as a snack. I do make this very often, that is, whenever I have an avocado or two in the house. I seem to buy my local greengrocer’s weekly summer haul of avocados.
I must ask for a discount next week. I also need to remember to make a bowl of guacamole. Tomatoes and chili peppers are now at the top of my shopping list.
