This pasta recipe has practically written itself. I think this has been one of my busiest weeks so far, and one of the most productive, though not in terms of work. I’m really behind on my writing course work, so unfortunately I have to try to remedy that all day tomorrow. I won’t be able to finish everything but I have allotted the whole morning to that. Tough. But now we have aircon units in the office so at least I can continue working even through the afternoon heat. *Pumping fists in the air*

It’s been a fab Friday so far though. There’s a lovely cool breeze around. I spent my morning, taking a mountain of glass jars and bottles to the recycling bins down the road, then I caught up with an old friend of mine whom I haven’t seen in ages, spent more than two hours talking about everything under the sun over a nice meal, squeezed in a little veggie shop while comparing notes on various recipes, I also bought a new lime coloured dress…Shh and returned home right after lunchtime. Life is good.

Two Simple Recipes: Vegetable Soup and Garlic and Chilli Kale

It’s still reasonably cold in the Med and I’m still nursing a very bad cold. My neighbour’s kid is having a ball running amuck right above my head, most probably sitting on a desk chair and sprinting across the corridor. Either that or playing boċċi. Who knows? Can’t imagine the grief he’s giving his mum, but I can definitely picture the grief he’s giving me!

So just when my head starts to ache I decide to post two recipes on C&T. Simple stuff but they are just the things I want to eat when I’m inside with quite some time to spend in the kitchen. There will be plenty of chances in the future for chips. That’s exactly what’s keeping me going! *Checking my forehead for fever*

Yellow Corn Soup

J and I just returned from Ghent (or Gent), a delightful medieval town approximately 50 minutes from Brussels. Last Friday I spent a good number of hours doing some exploring while J was at the university attending a seminar and giving a lecture at the end of the evening. So I was pretty much left alone for a whole day. The tram journey into the town centre was so much fun, although I was practically stuck to my map counting the stops. Everything was in Dutch. But hey, I was up for a little adventure. The weather was so rotten however, that my plans for major exploring/walking/taking-plenty-of-photos went down the drain. All was not lost though; I found a charming salad bar and sandwich shop (tucked away in between the touristy restaurants and shops) which I almost missed. LKKR is a small family business run by Dahlia and her husband, both lovely and friendly. This is the place where to have a healthy, delicious, homemade lunch, plus coffee, of course. You could also have a cookie if you wish like I did on that rainy morning.  I liked the place so much that I just had to take J for lunch there on Saturday. I felt so in-the-know! It was so cold that he ordered a soup. I had a chicken curry sandwich. Just what I needed. If you’re in Ghent, do yourself a favour and go. Prices are reasonable and if there’s no seating inside, you can take a table outside, people-watch while wrapped around a cozy pink blanket you will find on your chair. Nice. The frites, mussels, fish stews and waffles can all wait until you arrive in Brussels. Even nicer.

If you know me personally you will have no doubt as to how much I miss our years in Surrey. Please don’t think that everything was plain sailing; nothing in the real world is totally charmed. We had our ups and our downs, but one thing’s for sure – the kitchen space in our tiny flat was my refuge. There were times when I cursed its size (for years I wished for a larger space as I was constantly running out of workspaces) but now that this wish is granted I do tend to feel lost. I was saying that to my beautiful Mum this morning. She understood.

Warm Couscous and Courgette Salad

I have spent my morning and afternoon roaming around Guildford, taking in the place. I walked around the centre, recorded some sights, bought myself a healthy lunch and made my way up to the Castle. I took my small camera with me to take a few video snippets. I’m trying to teach myself how to vlog. I shouldn’t have said that. My SLR didn’t come with me today. I really wasn’t in the mood to carry heavy stuff in my backpack anyway. These days I have given up on handbags: nothing fits in them anymore. They are currently also packed in a plastic box ready to be shipped. (People, if you’re not into nostalgia, then please just skip this part. Thankfully there’s a recipe in here somewhere!) I was prepared to walk into town, knowing that I would enjoy the stroll. I arrived there around 9 am, feeling sticky to the core, because with Ellie Goulding singing in my ear for the last ten minutes or so, I almost ran the last leg. I should have listened to Clannad instead. Weather like this, (I’m subconsciously bracing myself for Malta here) is good for sipping a cold drink under an umbrella, with some food, of course.
