Indian-Inspired Kerala Stir-Fried Beef and Rice

Beef Stir-Fry (9069)The other day I posted one of my favourite entries in C&T on my Facebook page. It was an assignment for a Blogging University course (which has now ended) that included a quote. I remember not knowing what quote to choose, but being a creature of habit, and thus feeling like a hobbit most of the time, I decided to go for one from Tolkien’s masterpieces. I got loads of positive feedback for that piece and the recipe I included in it is one that I make again and again. I’m sure you’ll agree that a walnut and banana loaf cake is one of the most comforting bakes around. That and a scrumptious cup of thick hot chocolate.

So you won’t find many recipes on this blog that venture too much out of my comfort zone. C&T started out, and still is I think, a place to share what I cook at home, primarily in a small kitchen, as the ones I had back in the UK. Now I have a somewhat larger room to play in. I am lucky and I like the space, though it wasn’t easy to adjust to it.

By mere coincidence I’m posting a delightfully simple Mexican soup recipe, well loved in this house, because I’m putting it out there right now – it’s got chocolate in it. This is my take on what is still one of my very favourite cookbooks. Jack has published another book after this, which I still need to see, but I think that her first book deserves to be a classic. There is no need to write a second positive review because by now I’m sure you all know how much I like the recipes and Jack’s honest way of writing. She is a master at turning a few simple ingredients into something special, with the help of a little bit of chocolate. It does make a difference so don’t be afraid to add it.

Easy Chilli Con Carne

Whenever I meet up with friends, one of the first questions they ask me is “what are you cooking today?” Such a great question. Seriously. It’s a simple one really, but there’s always a reasoning behind it which I totally get. Because when you’re the one in charge of feeding the people living in your household, thinking about what to cook every single day, or more tediously, day in, day out, it starts to feel as too much of a chore. I applaud every one of you though. I know where you’re coming from and I understand.

Peach and Chickpea Curry with Noodles

I have been meaning to post this recipe for quite a while and I guess there’s no time like the present. It was almost not going to happen, and as I’m writing this it didn’t happen yet. The people upstairs are blasting away at the wall installing their aircon, and now I’ve got Celine Dion blasting in my ears in turn. Thank goodness for noise-reducing headphones! There’s a solution for everything…well, almost. But now I’m back in the game baby and it feels good.

This morning has been rough. I woke up in a tizzy (is that expression still used today?) after taking for ever to sleep, downed some hot chocolate (not a good idea in this heat) before I changed into something other than my pyjamas to visit my mum. A few trips to the grocery store, veggie truck and other errands, and I was knackered. So if you see a typo or two today, please be kind!

Aubergine Chermoula

Thank goodness and everything or anyone you and I might believe in, Christmas came and went without a hitch. I promised myself I wouldn’t worry too much about it but in reality J and I spent the best part of the week before feeling sick about the whole thing. At one point I even thought I had some sort of stomach ulcer. Part of it was my fault I’m sure – but looking back I cannot see what was all the fuss about the cooking, since I spent two days prepping everything beforehand. But you see, it was not all about the cooking. Anyhoooo, everything turned out just fine.
