Mark Bittman’s Apple Crisp

Apple Crisp (0951)The story doesn’t change much after all. You have a bunch of apples which you will surely hate if you don’t do something with them. That’s how this recipe came to be. If I had to choose a fruit as a mid-morning snack I would most definitely not go for an apple. How can that be, you might ask? I can’t give you a valid reason for that I’m afraid. (Although, come to think of it, this might be indicative of having to eat boiled apples when I was a child every time I got sick.) However give me an apple pie and I’ll devour it. Add a couple of ice cream scoops and I’ll polish it off till the last crumb. Come on, admit it, won’t you do the same?

Banana Pancakes (SF)

Banana Pancakes (0621)I planned to post a different recipe today but this week life has been sweet. Very sweet. I went to Flora’s three times at least partly to celebrate my birthday with my two of my dearest friends. It was so much fun. They are great company and two marvellous ladies. So this year I didn’t bake a cake – I mean, with so many indulgent cupcake and pancake trips there really wasn’t. Even I have to admit that! And frankly I just didn’t feel like spending a whole day in the kitchen like I did last year.  I cooked for days, to celebrate three family birthdays on three consecutive days. This time round I knew I deserved and wanted a break.

Sugarless Apple and Banana Cake

No Sugar Prune and Banana Cake (0438)Hold on, hold on, I hear you say. I know! Today I am giving you something which doesn’t normally appear much here at C&T HQ. When people ask me for alternative ingredients, or diet related recipes I usually give them links to some of my favourite blogs. I don’t do that out of laziness. Most of the time I go out of my way to look for good nutritious recipes that don’t take loads of time and faff to make. This doesn’t apply to food allergies or any other health issue. I do take issue with those who look down on others because they don’t eat “clean”. What? Are the rest eating dirty? And this is not one of those recipes, so there’s a sigh of relief! I can hear it from here.

But that is another story, or rather another blog post. Having said that I am waiting for some books on the subject to arrive through the post very soon, which I hope to be reviewing in the next few weeks. If they decide to get here, that is. I’ve been waiting for over a month now.

Puff Pastry Apple Tart

Sliced AppleTart (9987)I think I mentioned this before: apples are not necessarily my favourite fruit. Then, you say, you were living in the wrong places. And you might be right on that one! Michigan is practically apple-mad and so is the UK. For me, apples are meant to be eaten as they are, raw with the skin on if possible. I don’t like cider either, but a trip to the cider mill is always fun.

I am partial though to the apple and pastry combo. I generally don’t believe in rules when it comes to food, but I am particular about this. Apple pie is to be eaten hot with vanilla ice-cream. No custard malarkey business and for goodness sake, no cold pies please!

Butternut squash Lasagne (#PastaFriday)

This pasta recipe has practically written itself. I think this has been one of my busiest weeks so far, and one of the most productive, though not in terms of work. I’m really behind on my writing course work, so unfortunately I have to try to remedy that all day tomorrow. I won’t be able to finish everything but I have allotted the whole morning to that. Tough. But now we have aircon units in the office so at least I can continue working even through the afternoon heat. *Pumping fists in the air*

It’s been a fab Friday so far though. There’s a lovely cool breeze around. I spent my morning, taking a mountain of glass jars and bottles to the recycling bins down the road, then I caught up with an old friend of mine whom I haven’t seen in ages, spent more than two hours talking about everything under the sun over a nice meal, squeezed in a little veggie shop while comparing notes on various recipes, I also bought a new lime coloured dress…Shh and returned home right after lunchtime. Life is good.
