Chocolate and Avocado Muffins

chocolate-and-avocado-muffins-0740Last week went past so fast that I have realised only today that I was due to write a couple of posts on this blog. I have quite a few recipes to choose from, and I was about to start a new one. However during my visit to the veggie store this morning, my trusty greengrocer commented on the new cover photo on my Facebook page. It also follows nicely from the savoury ones I posted before this one. (Just for my lovely readers to know, you can now also find me on Instagram, where I also happened to post a similar snap almost four months ago to this date.)

They say that practice makes perfect, and I need a lot of practice when it comes to muffins. I cannot complain about the recipes I try, because I know they’re good and so easy to whip up. They are also life-savers when unexpected guests show up for a spot of tea and cake.

Chocolate and Peanut Butter Squares

No-Bake Chocolate and Peanut Butter Bars (0209)

A few weeks ago I was invited to a friend’s house. It was already sweltering hot but the day before, as a result of my Facebook status at the time, and a special request for it, I baked some chocolate chip cookies. I never ever regret baking, especially for others and it’s only good manners to take something with you when someone welcomes you to their home. And you know the drill, for good friends I would do that and more. Another friend of ours made the most delicious rice salad I’ve ever had, with the freshest mozzarella and seafood. Bringing dessert was the least I could do.

I have some time on my hands this afternoon and as usual I did a round of my edited photos in my never-ending list of computer files and folders. They seem to get bigger by the minute and sometimes it’s very hard to keep track of things. Having said that I need to check those currently on my phone, which also needs some serious decluttering. Does that word even exist?

Originally I didn’t plan to give you the recipe for the pastry, as I did write a post about it some years ago. I thought “it’s just what I do sometimes when I have some leftovers”, and I *always* end up with leftovers. However to save you a few seconds until you wait for your browser to look it up for you, I decided to include it here anyway. It’s been quite a while. And I would rather have you do this than throwing any extras away.

Squidgy Chocolate Cakes

Squidgy Chocolate and Coconut Cake (0055) It’s been warm this week. Warm enough to say something like “I give up on baking until the end of December!” I’ve been busy. Busy means good by the way, although I’m already tired and it’s not the weekend yet. It’s Wednesday and I keep insisting it’s Thursday. Take no notice of me, please! On the positive side though I can finally say that our guest bedroom is almost done, just in time for our friend’s arrival on Sunday. I am happy.

Yoghurt Chocolate Cake

It’s been a while since I posted a recipe for chocolate cake. Now I can tell you that I have another one for you coming soon, apart from this one of course. I don’t know about you but there are times when only chocolate will do and for me there’s no better way than a good homemade sweet. I have said before and will say it again that I am one of those few who still resists adding salt to chocolate. True: salt enhances the taste of everything. However I believe that if you use good quality strong dark chocolate you don’t need anything else. I also find it drying. And contrary to what many in the industry say, I don’t find chocolate without salt to be flat in taste. Also, I have found adding coffee to be totally unnecessary. These sound like fads to me. And if it ain’t broken, don’t fix it.
