chicken-and-veggie-broth-0573Happy New Year everyone! I hope you had a good break over the past few weeks, and that you enjoyed the holidays. It was a very busy time here of course, and my kitchen worked overtime this year. I’m so happy that it did though. I also had the time for some baking for family and friends. There was no better time for switching on the oven and turning on the heat. It wasn’t that cold in December, but let me assure you that January has started off with a kick. We’re feeling it here in Malta this week. It’s going to be a cold weekend. Some are loving it, relishing it even, others are fuming excuse the pun because they’d rather be sweating it out in August.

Roast Beef with a Simple Gravy

Christmas is around the corner and the preparations have begun. I haven’t really been in the swing of things this week, although my trees are up and so are the rest of the decorations. My beautiful mum has been over to help me, although I suspect she came over to keep me company first, helping me out second – something which I always relish. To me, she is truly one of a kind. I love her to bits. I’m having people over this year for the day and although I still feel the pressure (even though I know I don’t need to) she somewhat managed to ease my nerves. I hope to offer a little bit of that by the some of the recipes here on C&T.

Yellow Corn Soup

J and I just returned from Ghent (or Gent), a delightful medieval town approximately 50 minutes from Brussels. Last Friday I spent a good number of hours doing some exploring while J was at the university attending a seminar and giving a lecture at the end of the evening. So I was pretty much left alone for a whole day. The tram journey into the town centre was so much fun, although I was practically stuck to my map counting the stops. Everything was in Dutch. But hey, I was up for a little adventure. The weather was so rotten however, that my plans for major exploring/walking/taking-plenty-of-photos went down the drain. All was not lost though; I found a charming salad bar and sandwich shop (tucked away in between the touristy restaurants and shops) which I almost missed. LKKR is a small family business run by Dahlia and her husband, both lovely and friendly. This is the place where to have a healthy, delicious, homemade lunch, plus coffee, of course. You could also have a cookie if you wish like I did on that rainy morning.  I liked the place so much that I just had to take J for lunch there on Saturday. I felt so in-the-know! It was so cold that he ordered a soup. I had a chicken curry sandwich. Just what I needed. If you’re in Ghent, do yourself a favour and go. Prices are reasonable and if there’s no seating inside, you can take a table outside, people-watch while wrapped around a cozy pink blanket you will find on your chair. Nice. The frites, mussels, fish stews and waffles can all wait until you arrive in Brussels. Even nicer.

Beef and Anchovy Stew

Shall I state the obvious? I think I will. If you don’t like beef and/or anchovies just don’t bother. Mmm…don’t like the sound of that so let me rephrase. If you like beef but you or anyone you’re feeding is not so keen on anchovies, to put it mildly, try this recipe. Adding them does make a difference. You will not be able to taste them, but they give a depth of flavour that you won’t get with anything else.

Bloody Mary

Fact is I’m not much of a drinker. I do enjoy a glass of red with dinner sometimes and I am also partial to some port or brandy in the colder months. Yes I’m getting old. This is a first for me, in that today I’m giving you a cocktail recipe. From what I have read, there are, apparently two schools of thought on Bloody Mary: the love it or hate it. I would like to propose another: the occasional one a.k.a. it’s-good-for-brunch. I won’t go into whether it can cure a hangover or not. I haven’t tried that, and I wouldn’t want you to, but hey I’m not your mum…but don’t get sloshed! No, I’m not lecturing you.

It’s very very really salty, but it’s fantastic for a brunch party any time of the year. I was once told a story (true or not I have no idea) about a host inviting a so-called-friend for brunch simply because this person mixed the most delicious Bloody Mary ever! One thing I can tell you for sure is that I wouldn’t have liked to be this friend, but I would have liked one of these. Happy Holidays!

  • 45 ml vodka
  • 150ml tomato juice
  • 15ml fresh lemon juice
  • pinch celery salt
  • 2 dashes Worcestershire sauce
  • 2 dashes Tabasco sauce
  • freshly ground pepper
  • celery stick
  • lemon wedge as garnish

Fill a tall glass with ice. Pour in the tomato juice and lemon juice. Add the vodka, celery salt, Worcestershire and Tabasco sauces. Give everything a stir, then add the pepper. Garnish with a lemon wedge, a celery stick and a stirrer if needed. And you’re done.
