Chocolate and Avocado Muffins

chocolate-and-avocado-muffins-0740Last week went past so fast that I have realised only today that I was due to write a couple of posts on this blog. I have quite a few recipes to choose from, and I was about to start a new one. However during my visit to the veggie store this morning, my trusty greengrocer commented on the new cover photo on my Facebook page. It also follows nicely from the savoury ones I posted before this one. (Just for my lovely readers to know, you can now also find me on Instagram, where I also happened to post a similar snap almost four months ago to this date.)

They say that practice makes perfect, and I need a lot of practice when it comes to muffins. I cannot complain about the recipes I try, because I know they’re good and so easy to whip up. They are also life-savers when unexpected guests show up for a spot of tea and cake.

Veg Box

Veg Box (0658)There’s not a lot I can say here, except that I bought this beautiful veg and fruit box a few weeks back. I was so happy with it that I snapped a few pictures as soon as it was delivered to me, at around 9.30pm on a weekday night. You wouldn’t think so though because J immediately held up the flash and reflector for me when he saw me reach out for my camera. It turned out pretty well.

Avocado Wrap with Crispy Egg and Chorizo (0232)

Some people ask me what are my go-to things I make when I’m hangry. This is not a typo, it’s a word apparently, though my search for it in the dictionary was unsuccessful. It’s a mesh of two words: hungry and angry. It wasn’t on Merriam-Webster, but boy have I experienced this before. And I’m guessing that you have too. It happens when I want to eat but I’m pressed for time or when I really want to munch on something but I just don’t want to be bothered.

The following recipe is what I go for when I want the kind of lunch that doesn’t necessarily make me crave anything else as a snack. I do make this very often, that is, whenever I have an avocado or two in the house. I seem to buy my local greengrocer’s weekly summer haul of avocados. I must ask for a discount next week. I also need to remember to make a bowl of guacamole. Tomatoes and chili peppers are now at the top of my shopping list.
