Happy New Year everyone! I hope you had a good break over the past few weeks, and that you enjoyed the holidays. It was a very busy time here of course, and my kitchen worked overtime this year. I’m so happy that it did though. I also had the time for some baking for family and friends. There was no better time for switching on the oven and turning on the heat. It wasn’t that cold in December, but let me assure you that January has started off with a kick. We’re feeling it here in Malta this week. It’s going to be a cold weekend. Some are loving it, relishing it even, others are fuming
excuse the pun because they’d rather be sweating it out in August.

Neapolitan-Inspired Bean Soup
I was going to write an entirely different recipe today, but that is taking so much of my time on this rainy busy day, that I just had to forgo the idea. Instead let me give you a deliciously hearty recipe for a soup that is easily becoming a staple in my house.
A few months ago, my bro-in-law J2 awarded me the guardianship of some of his cookbooks, a role which I take very seriously, by cooking from them myself, as it should be. It made me think of this beautiful bean soup, especially because today the rain is coming down hard on this island, and it looks as if it’s staying for the next couple of days. It’s annoying but truly we need it. I feel sorry for all those who need to venture out. The roads are crazy with traffic and I just received a message from a friend saying how soaked she got. Stay safe and avoid extra driving everyone. It’s not nice out there.
Chocolate Chip Bread and Butter Pudding
I just asked Facebook’s hive mind for some quick suggestions on what to listen to while doing some writing. I’m such a creature of habit and I can easily get stuck on the same playlist over and over again, until I get really sick of it. That’s all good though. When that finally happens I just like to try something new. And it’s not Christmas music; I only listened to some of that this morning while doing some early cooking prep. It didn’t help one bit to induce the Christmas spirit. So here I am listening to some soft pop and enjoying it. Don’t judge. If you’re curious Ed Sheeran just came up. Not bad. Not bad at all.
Carrot and Pineapple Cake
Thanksgiving is a wonderful holiday. It’s all about family and friends, and everything that should be celebrated about life. My year has been full; to be honest I really don’t know how quickly it passed by. Someone once told me that the older we get, the more we feel that. I think it’s true. For me it’s so important to stop once in a while and appreciate all the good things that come my way. My year has been like a yo-yo, like everyone else’s I guess, but still I feel thankful for the dearest people in my life. Especially those friends with whom I reconnected. You know who you are. Also a special shout-out to Sadie from Sadie’s Nest, Julie from Hostess at Heart, Anna from Life Bellissima and Sarah from Sarah’s Attic of Treasures. Four lovely ladies right there!
Stuffed Baked Aubergines
This week will be a stay-in week. Lucky you, I hear you say. Honestly, I would love to be out and about though, instead of being stuck with a very painful ear and throat infection that’s really making me lose both my patience and hours of precious sleep. I wasn’t even going to post anything for the next few days, but C&T really needs some love, care and attention right now, so here I am. I love being here, sharing recipes and cooking tips, and writing. Also I learn so much by reading comments and blogs by my favourite people. It’s totally worth being here. Even if half of my face is a mess and telling me to rest. Now.
However it’s going to be a rainy week they say, and what better excuse than to spend some time in the kitchen and bake. A very good friend of mine and her daughter gave me a couple of cake recipes which are the bomb. They are so good that I plan to share very soon. I just love it when people share their favourite recipes with me and in turn allow me to share them with you. I will give them a mention of course when I do just that, because that’s my style and I like to keep it that way. Come back for more later, but in the meantime onto today’s dish.
