Instead of three logs, you get four here, but the basic method is still the same. Seven days until Christmas. Now that’s 2016 almost over. I just can’t believe it. Can you?! We have been having quite a rainy week and for the very first time yesterday I felt the cold and the humidity. Is it really time to wear our coats? Could be, but it should get a little warmer over the next few days so we’ll just have to see about that. My friends in MI have been some wicked snowstorms. I’ve been asking for some but none of them obliged yet! Oh well.

Hey everyone! I hope you’ve been having a good few weeks. I have been out of sorts lately. December is not my month – I’m not too big on Christmas. I do the usual stuff and J and I have our family over for lunch which proceeds into afternoon tea and evening drinks. We don’t mind at all, but I cannot deny that by the end of the day I’ll be totally zonked out. It is a quiet day, and I make sure to plan ahead. This year I’m still going through lists and things, and year after year I feel like I’m falling behind. However it all turns out all right in the end so I’m not going to worry. I decided it’s just not worth it.

And now let’s move on to some food – it’s a cake, and it’s chocolate. I have noticed that for the past couple of years I consistently post a chocolate recipe. Not only am I constantly searching for that perfect chocolate cake, but also I know that the simpler and quicker that recipe is, the more inclined I am to making it. Plus at this time of year there’s enough running around and trying to catch up with preparations for Christmas lunch and/or dinner, which ever one is traditional for you.

It’s the second week of December and it’s about time I posted a festive recipe, don’t you think?! Having said that I’d better take the decorations out of their storage boxes before the end of the year. I have been busier than usual for the past few months, to the point where I have neglected C&T. I’m proud though that I have managed to be quite consistent and post something for you at least once twice a week. My dream is to post three days a week but planning good content isn’t easy. The philosophy behind this blog has always been quality over quantity and that has been my game plan for the past five years. It will continue to be that way I promise.

After much deliberation I’ve decided that the last recipe for 2014 will be one of the best I’ve tried this year. When I say the best I mean it in every sense of the word, including the easiest. I make this recipe again and again and it turns out good every time without fail. I also like to make it when I’m in a rush, or before I head off to someone’s house for lunch or dinner. Or when celebrating 4 years of C&T!

Since the countdown to Christmas is now in full swing, I thought that a recipe for shortbread is now in order. This is one of my go-to things to bake when I am invited at someone’s home. Reasons being: I definitely don’t need to spend a fortune for gifts, I can make it easily up to two days before the event (it will keep wonderfully well if stored properly), it can be easily transported anywhere without becoming a mess when travelling, and the recipe can be varied according to any flavour you want. I have once tried it with lavender and lemon zest. It was the nicest thing I have ever had. It’s a win-win situation all round.
