Pudina (a.k.a. Il-pudina ta’ Mari)

Having just returned home from a routine dentist appointment, I thought there was no better time to complete today’s post! This has been sitting around here since last Friday but I couldn’t complete it in time. Today, after having recuperated some much-needed sleep throughout the night, I can say that it’s the first time in a month I feel rested. The sciatica pain is slowly dying down and telling you that I am relieved is definitely an understatement. Cheers to that.

Lemon and Courgette Drizzle Cake (no butter)

So let me set one thing straight: I’m definitely not on some kind of health kick, as in eating clean and all that hoo-ha. However lately I’m on this…how shall I put it?…try-many-new-things…thingamabob. I’m sorry, but my vocab skills are out the door today. Please bear with me just a tad longer. This little gem of a recipe is worth the wait.

Sugarless Apple and Banana Cake

Hold on, hold on, I hear you say. I know! Today I am giving you something which doesn’t normally appear much here at C&T HQ. When people ask me for alternative ingredients, or diet related recipes I usually give them links to some of my favourite blogs. I don’t do that out of laziness. Most of the time I go out of my way to look for good nutritious recipes that don’t take loads of time and faff to make. This doesn’t apply to food allergies or any other health issue. I do take issue with those who look down on others because they don’t eat “clean”. What? Are the rest eating dirty? And this is not one of those recipes, so there’s a sigh of relief! I can hear it from here.

But that is another story, or rather another blog post. Having said that I am waiting for some books on the subject to arrive through the post very soon, which I hope to be reviewing in the next few weeks. If they decide to get here, that is. I’ve been waiting for over a month now.

Quick Chocolate Bundt Cake

Before I move on to another recipe, I would like to thank everyone who sent me messages after the post about Androuet and their beautiful book. I couldn’t have written that without the never-ending support of my lovely readers and friends so I want you to know how much I appreciate that. Thank you!

And now let’s move on to some food – it’s a cake, and it’s chocolate. I have noticed that for the past couple of years I consistently post a chocolate recipe. Not only am I constantly searching for that perfect chocolate cake, but also I know that the simpler and quicker that recipe is, the more inclined I am to making it. Plus at this time of year there’s enough running around and trying to catch up with preparations for Christmas lunch and/or dinner, which ever one is traditional for you.

Carrot and Pineapple Cake

Thanksgiving is a wonderful holiday. It’s all about family and friends, and everything that should be celebrated about life. My year has been full; to be honest I really don’t know how quickly it passed by. Someone once told me that the older we get, the more we feel that. I think it’s true. For me it’s so important to stop once in a while and appreciate all the good things that come my way. My year has been like a yo-yo, like everyone else’s I guess, but still I feel thankful for the dearest people in my life. Especially those friends with whom I reconnected. You know who you are. Also a special shout-out to Sadie from Sadie’s Nest, Julie from Hostess at Heart, Anna from Life Bellissima and Sarah from Sarah’s Attic of Treasures. Four lovely ladies right there!
