I cannot believe we’re already in the second week of February. Where time is going I really don’t know. It must be a good thing though – it must mean I have plenty of things to do. This month started with a birthday get-together for one of my dearest friends, and I know that more good things will follow. There’s nothing better than to feel positive. It’s hard sometimes because life is not only about smelling the roses but it’s the little things that make a difference. Like pancakes, just to mention one example!
I read somewhere that Pancake Day will become something more than Valentine’s Day. Well, you know what I’m down with that. So much so that I’ve started early – three days early this year. I love starting the day with a good breakfast, but to me pancakes make me think of one of those American family brunches, to which we were often invited when we lived in Michigan. And I think there’s no better day for brunch than Sundays. Since the topic of “what-am-I-going-to-eat-tomorrow” and today, of course is always on my mind, I decided mid-week that vi jew va (meaning whatever happens) pancakes were going to be the star of the show.
I made the ones in the featured photo a while ago, when I managed to find a few blueberries during one of my grocery shopping trips. I have posted the recipe time and time again on this blog, so I will give you the links below.
Extra tips: Yesterday though I added ½ a teaspoon of good quality vanilla extract with the milk, eggs and melted butter mix, for that little somethin’ somethin’. I loved the vanilla-ry taste. Also take the plunge and fry a few rashers of bacon. It tastes divine with maple syrup!
J didn’t quite get it. I did and by writing it here I have made a note of that just in case I forget for the next time. I’m very forgetful but I’m sure I won’t forget this. My mind is at rest!
